GommeHD.net is a big German Minecraft network, and you can feel that when you log in, chat's moving fast and there's a lot going on. It runs on play.gommehd.net and covers a mix of game modes rather than just one thing, so you're not stuck grinding the same map for weeks. If your German's rusty you can still get by, but the community leans heavily German so expect most of the banter in that language. Worth a look if you want a server with some history behind it instead of another empty box that just launched.
