ElderCraft

ElderCraft runs at mc.eldercraft.de, and it markets itself around an older, more mature player base rather than a young kid crowd. If you want a place where the tone in chat leans calmer and less chaotic than most public servers, that's the pitch here. Can't speak to specifics beyond that, but the name and slogan make the intent pretty clear before you even join.
